The Benefits of Eating Vegetables
When we are young our parent tell us to eat our veggies as they are good for us. We sit there and complain and maybe eat a bit of it, then give the rest to the dog while they aren’t looking, if we are lucky the dog will eat it if not we are in a whole lot of trouble.
As we get older we keep being told that we need to eat veg to help keep our bodies healthy and functioning as it should. The same fact still holds true today if we don’t eat our veggies we could be in a whole heap of trouble! Fact of the matter is that the nutrients in veg have many benefits to aid our bodies in the way that they function, mainly in the digestive systems and how well they do there jobs.
For a long time it has been said that to get the most from our veggies we need to eat them raw. A recent scientific study held Europe wide has shown this not to be true. The study has shown that cooking and mashing of certain vegetables can help our bodies get more of the nutritional value from them that we need. In particular the way we get carotenoids eating a raw carrot our gut can absorb something like 3-4% of the carotenoids, that could increase by upto 5 times if the carrots were cooked and mashed.
